This is a quick and easy meal that you can adjust to your own needs as far as portion goes. I’ve fed 10+ people and 3 people this dish. My mom first made this for me when I was a teenager and it’s become a staple in our home. My kids request it all the time.

Ingredients/Prep
Burger (any kind, beef, turkey, venison etc.) browned and drained**
Salsa of your choice, I use fresh chunky mild salsa.
Taco Seasoning; either a packet or homemade (see recipe below)
1 can corn; drained
1 4 oz can sliced olives (optional)
1 can chili beans
½ c Mayonnaise
¼ c Sour Cream
4-5 handfuls of shredded cheese (measured with your heart)
1 Family size bag of Nacho Cheese Tortilla Chips
Toppings
Shredded lettuce
Diced tomato
Sour Cream
Onion
Avocado
Jalapeno
Hot Sauce
Guacamole
Directions
In large bowl combine burger, salsa, corn, olives, chili beans; mix together
In a smaller bowl combine mayo, sour cream and taco seasoning
Once mixed add mixtures together.
Make a small opening in chip bag and crush chips inside (not to dust just into smaller pieces)
In a 9×13 pan spread half the chips on the bottom of pan
Place shredded cheese over chips
Pour all of burger mixture over cheese; spread evenly
Sprinkle remainder of chips over top and cover with cheese
Bake at 350 for about 15-20 minutes
Let sit for 5 minutes, serve and garnish as desired.
Suggested Side Dishes
Green salad
Guacamole and chips
Spanish rice and beans
Make your own Taco Seasoning
¼ tsp cayenne pepper
½ tsp salt
1 tsp regular paprika
1 tsp smoked paprika
2 Tbsp chili powder
2 Tbsp ground cumin
1 ½ tsp onion powder
**1 lb burger will feed 3-5 people, so gauge your burger needs accordingly. If feeding more than 7 people I would double everything in the recipe. You’ll have leftovers but those are always a perk!
